Food, Beverage & Breweries

Steam that keeps up with production.

Food and beverage plants use steam for brew kettles, cookers, blanchers, retorts, pasteurizers, CIP, and washdown. Loads swing hard when a batch starts or a CIP cycle kicks in, so the boiler, burner turndown, and feedwater have to be sized for the peaks, not the average.

Steam that touches the product has to be culinary steam, which sets the filtration and water treatment. We size the boiler plant around your production schedule and how much of the steam is culinary.

What matters

What a food, beverage, and brewery boiler room needs.

Load swings

Batch starts and CIP cycles pull steam fast. Turndown and storage matter as much as horsepower.

Culinary steam

Steam that contacts food needs filtration and food-safe boiler water treatment from your water treatment company.

Uptime

A boiler trip stops the line. Backup capacity and a rental plan keep product moving.

Washdown and sanitation

Steady hot water and steam for sanitation between runs.

Codes and rules

Food-contact steam and air rules.

Boiler water additives in steam that contacts food are limited to those listed in FDA 21 CFR 173.310, and culinary steam is commonly produced to 3-A Accepted Practice 609-03, A Method of Producing Culinary Steam. McKenna isn’t a chemical or water treatment company. Your water treatment company and food safety team set the chemical program, within the limits in the boiler manufacturer’s manual. Talk with them about additives and dosing; we build and set up the boiler plant to support it.

Food plants in the San Joaquin Valley and South Coast air districts face some of the tightest boiler NOx limits in the country, and adding a boiler for a new line usually means a new air permit. McKenna supports the permit and the source test for a new boiler, and brings existing boilers under the limit with ultra-low NOx burner retrofits.
